Strawberry Rhubarb Smoothie (kid-friendly)

I have vivid memories of sitting in my parent’s massive vegetable garden, eating stalks of raw, red rhubarb. Haha. Even as a child I loved that sour flavour. Turning into a Strawberry Rhubarb Smoothie for kids only seems natural.

Rhubarb is pretty fab for you. It’s chocked full of fibre…and it’s also high in antioxidants and vitamins K, C and minerals calcium, potassium, magnesium.

Though a little tart for a smoothie, making it into a rhubarb sauce first, then adding the sweetness of strawberries and milk, the final product is delicious and appealing to kids AND grown-ups. You can sweeten the rhubarb sauce as little or as much as you like, with your choice of sweetener. (My favourite is maple syrup.)

  • 1. To Make The Rhubarb Sauce: Chop the rhubarb into smaller chunks. Discard the leaves.
  • 2. Place in a pot with the o.j. and syrup. Bring to a boil. Then simmer over medium-low heat until it’s thick and sauce-like, about 10 minutes.
  • 3. To Make The Smoothie: Place the strawberries, cooled rhubarb sauce, milk and ice into a blender and blend until smooth, creamy, and thick.
