Strawberry Maple Muffins (kid-friendly)

Ooooo, my kids are so happy. I didn’t realize these strawberry maple muffins would be such a HIT. A super hit! And they’re seasonal. And easy to alternate with substitutions, if necessary.

They’re also a wonderful lunchbox snack — for kids OR adults.

Strawberries turn into strawberry maple muffins! Take advantage of the season and make the recipe below.

  • 1. Sift first three ingredients together. Add remaining dry.
  • 2. Combine wet ingredients.
  • 3. Make a well in the dry ingredients and stir in wet until JUST combined. (Don’t over stir if you want fluffy muffins.) Fold in strawberries.
  • 4. Place 1/3 cup batter in paper muffin cups (or butter each muffin tin hole).
  • 5. Bake for 15 minutes at 425 F. Let cool for 10 minutes on a rack.
