Seasonal Strawberry Spinach Salad

Strawberry season is upon us. And before the strawberry picking plethora is over, you MUST make this super simple seasonal Strawberry Spinach Salad. Mark the true start of summer. A simple salad salute.

This salad makes a lovely addition to any barbecue, picnic, or stands alone for lunch. Or eat a version of it on the upcoming Spring or Summer Dumps.

I use this beautifully flavoured fig balsamic – try and find some with quality – this vinegar brings out the sweet flavour of the berries.

The recipe below is really a seasonal celebration. Doesn’t that sound wonderful?

Instructions

  • 1. FIG BALSAMIC DRESSING: Keep it simple. Shake in jar before drizzling.
  • 2. TURKEY BREAST: Sprinkle breast with salt and pepper. Brush dijon mustard on both sides. Combine parsley, garlic, oil and zest. Press onto the top. Place on a cooking sheet and bake 350 F for 30 minutes or so. Alternatively, grill on barbecue after marinating with above items for an hour or so – increasing oil to 2 Tbsp and adding some lemon juice. (This can be done up ahead and kept wrapped in fridge for any salad topping.)
  • 3. SPINACH SALAD: Combine salad ingredients. Enjoy!
