LENTIL GRANOLA

It’s true – you REALLY CAN make delicious, grain-free granola out of lentils. The sprouted option is beyond delicious and even better for you.

Instructions

  • 1. Bring a pot of water and lentils to a boil and simmer for a few minutes
  • 2. Do not cook all the way - just soften
  • 3. Drain and let water evaporate a bit
  • 4. Preheat oven to 300 F
  • 5. Melt the honey a bit if it's hard
  • 6. Add oil and cinnamon
  • 7. Place lentils in a bowl and toss with the liquid mixture
  • 8. Line a baking sheet with parchment paper and spread mixture out evenly
  • 9. Bake for 30-45 minutes, stirring halfway through (and adding almonds halfway, if using)
  • 10. Add pumpkin seeds and shaved coconut and bake another 15 minutes or so. The coconut is so pretty
  • 11. Remove from oven and give it one last stir and let it cool
  • 12. Add chia and hemp seeds after cooled
  • 13. If it isn't sweet enough for your sweet-tooth-kidlets add some dried fruit
  • 14. Store in an air-tight container
  • 15. Serve with raw milk or milk alternatives, yogurt or coconut yogurt, fresh berries, banana or whatever
  • 16. *Alternatively, use sprouted red lentils - you don't need to cook these in water at all*
  • 17. Sprouted Lentils are easy-peasy to make: Soak red lentils over night with a squeeze of lemon. Drain in a strainer and place over bowl. Rinse twice a day but keep lentils in strainer over bowl. Repeat until the lentils have a tail, about 2 days.
