LACTO-FERMENTED MAYONNAISE

Who says mayonnaise has to be bad for you? And who says the homemade stuff can’t last longer than a day? That’s why you NEED to make this super easy lacto-fermented mayonnaise.

Using good quality oils is key to its robust nutrition. But ALSO…and there’s a “secret” ingredient makes it EXTRA special.

Instructions

  • 1. Throw the first 4 ingredients in a blender and turn on
  • 2. With motor running SLOWLY add the oils, until incorporated
  • 3. Last, add the sauerkraut juice
  • 4. If you want to take this a step further and actually ferment then leave covered on a counter overnight - then place in fridge. Otherwise, if it weirds you out, put in fridge right away. The sauerkraut juice will make it last longer regardless.
