  • 1. Preheat oven to 450 F
  • 2. Process everything except chicken and oil until mixture looks like coarse breadcrumbs - keep in mind, larger chunks don't work a well
  • 3. Put flour mixture in Ziplock bag
  • 4. Rinse and pat dry chicken breasts and cut into strips or nugget-sized pieces
  • 5. Coat chicken pieces in olive oil and place in bag
  • 6. Shake it around and coat every piece with flour mixture
  • 7. Place on baking sheet and bake in oven about 15 minutes - less if using convection. (I prefer convection - the outside gets a bit crispier)
