Creamy Curry Dressing

I love my food to match. I created this creamy curry dressing simply because I wanted a tasty salad to go with my Creamy Spiced Lentil Stew. And it’s so hard NOT to eat salad during harvest season. I mean…there is just SO MUCH AVAILABLE. It’s pretty awesome.

You can serve the creamy curry dressing recipe below with just about any combination of greens. I’ve eaten it with a pile of spinach and romaine, topped with blueberries, toasted pecans, green onion, and raw sliced summer squash. I’ve also eating it with a hardy green combo topped with edible flowers, heirloom carrots and cherry tomatoes, raw-fresh-young-ginger. The possibilities are endless. That’s the good part.

The point is…you can use this creamy curry dressing to top any side you can — in order to compliment a simple and tasty curry.
