Yep. I am incredibly addicted to anything chipotle – which is why I had no choice but to create a potato salad version. I’m also kind of addicted to BBQ season, picnic season – any reason to eat food in the great outdoors. I don’t typically eat a lot of potato. But potato salad? Hello! So this awesome chipotle potato salad is my jam.
I LOVE chipotles’ smokey, tasty perfection. And spiciness, too. It became my most addictive flavouring back when I didn’t eat meat. I suppose I was using it to replace that smokey bbq experience – without falling back into bacon heaven.
This Chipotle Potato Salad is super tasty – and it’s secret? The toasted sesame oil. It allows all the flavours to rise to something even better. I ALSO make this salad using sweet potato. Which I love just as much. And when I do I GRILL the sweet potatoes gently on a rack on the bbq.
Make it with Homemade Lacto-Fermented Mayonnaise or a decent store-bought version (NEVER Miracle Whip — ew).
