AVOCADO MANGO BLACK BEAN SALAD

An avocado mango black bean salad is perfection. We are lovers of anything that resembles taco-time around here. This salad is the perfect balance of sweet, spicy, salty. It’s everything. And you can whip it up in a few minutes only. A key thing for most people if they’re going to make AND EAT real food.

The other cool thing about this Avocado Mango Black Bean Salad: You can eat it as a salad, OR use it as a taco topping, OR eat with tortilla or homemade rice chips. Don’t forget to throw it over grilled or broiled fish. It’s even yummy with some spicy, grilled chicken thighs.

And it’s a recipe used time and time again on the Spring Dump. Once warm weather hits it’s simply ALL YOU WANT.

Instructions

  • 1. Combine items.
  • 2. If using as a Dip pulse 1/3 of the ingredients in food processor to thicken a bit.
  • 3. If using as a Salad you may serve over greens.
  • 4. If using as a Taco Topper eat with corn tortillas or romaine lettuce cups and serve with any taco or These Fajitas.
  • 5. Or serve on This Chili.
