This Avocado Bacon snack recipe is really wonderful in its simplicity. Salty bacon and fatty avocados are a marvellous pairing. But there’s a PLANT-BASED version, as well.

  • 1. Cook bacon, either on the stove in a pan, or in the oven...until crispy.
  • 2. Cut avocado in half. If it will be open for awhile just rub some lemon juice on it to prevent browning.
  • 3. Place cooked bacon in the pit hole of avocado.
  • 4. My fav way to top it off is to make a balsamic reduction to drizzle on top. This step can be skipped however. Especially if you are less inclined to sweet. Balsamic Reduction: Place desired amount of vinegar (at least 3 Tbsp) in a small pot. Bring to a boil and reduce until desired thickness.
  • 5. *Alternately substitute bacon for 2 Tbsp sunflower seeds (preferably soaked then dried). Toast sunflower seeds lightly in a pan. Half avocado. Sprinkle with a bit of salt. Sprinkle seeds in eat pit. Enjoy.
