Real Food LUNCH BOX: Veggie Dip (emerg lunch)

This morning I panicked. Lunch box post due, husband out of town, NO FOOD, no bread or regular lunch fare items, no leftovers, ingredients for originally planned lunch box item missing…

Not only did I not know what to post, but I didn’t know what to put in it at ALL.

We are leaving for vacation soon and haven’t been shopping — just using up what we have. As I stared into the refrigerator this morning one thing came shining through….PRODUCE. It has to go. And I always make sure we’ve got LOADS of veggies around.


EMERGENCY LUNCH: loads of veg with homemade ranch dressing, rice crackers, cheese x 2, devilled egg, kiwi

The result ended up fabulously colourful, nutrient & fibre-dense, sufficient protein, and STILL made my kids happy. PHEW!!! Throw in a quick veggie dip and EVERYBODY is happy.

Quick-As-Heck Ranch Veggie Dip 

Kids have an obsessive thing for ranch dip. I personally find the store-bought stuff gross-as-heck. But this insanely fast homemade version is quite nice, now that I’ve messed around long enough. (And kids eat it.) 

  • 1/4 cup homemade or decent, store-bough mayo
  • 2 Tbsp greek-style yogurt or sour cream
  • pinch of EACH parsley, dill, onion powder, garlic powder (or fresh), sea salt, pepper
  • 2 tsp raw cider vinegar

Whip it!!!
