Oh peach season. My true love. My favourite fruit. They take me to my happy place.
They’re also high in fibre, low in calories, and loaded with trace minerals. Eek.
So I was PRETTY excited to try them as a savoury item for a change. I wanted to chance to use them somehow for the Summer Dump and I was trying to think of the best way to pair them up with something spicy like arugula, or bitter like kale.
I get so bored with kale. I’m over simple braised kale. I love kale caesar but one can only eat so much. And it really is something that digests better cooked. I really love romaine grilled. And I decided to give kale a go that way.
Yeah, kale and peaches go JUST FINE together. Just fine indeed. The sweetness from the peaches cuts the bitter right out of the kale. The crunchiness of the kale can almost compare to kale chips. So yes…it’s sort of like eating a kale chip salad. haha. But it works.
Therefore I bring to you…
Grilled Peach and Kale Salad
- olive oil, for brushing
- sea salt and black pepper
- 2 large, firm, ripe peaches, cut in half, pitted
- 5 or 6 large kale leaves
- 2 green onion, sliced
- 1/4 cup toasted almonds, chopped
- splash or two red wine or cider vinegar
Brush whole kale leaves and peach halves with olive oil. Season with salt and pepper. Heat grill to medium heat.
Place peaches on the grill, flesh side down. Grill until they begin to soften, heat and get nice grill marks, about 5 – 8 minutes.
Watching carefully, add the kale leaves and grill about 1 1/2 minutes each side.
Remove kale and peaches from grill. Strip kale leaves from its stems and chop coursely. Slice the peaches. Place in a bowl and add green onion, almonds and a drizzle of vinegar.
