A word that creates a survival-state for EEEEEEVERYBODY!!!!! Yep. And it’s BARELY in our vocab for some craaaaaaazy reason. Especially when we’re discussing back to school survival.
But WOW. Back to school. It’s been a bit chaotic but not in the way I was expecting… I can’t believe it really, but I feel a bit blue.
Transition can be really weird.
And summer is over. No more mid-day cocktails at the lake. No more green smoothies for dinner. No more nomads? (That’s an inside joke. Sorry.)
Everyone is affected by this time and transition, but there is an added layer of pressure (for mamas) when you have to get the school routine right, and read all the stuff that comes home, and sign up for gazillions of things, which means spending a pile of money in a matter of minutes.
So what is the key to surviving this insanity? The key is SIMPLICITY.
I get it…if you’re like me, it’s difficult to just keep things that way. (Especially in the kitchen.) Why have just scrambled eggs when you caramelize onions and make a wicked omelette?
But simple things taste beautiful. And so does real food. Especially together. So if you have the choice (with little time) to make the following, which thing do you choose?
- Packaged bullshit
- Real Food that’s simple and takes minutes to make
- Real Food that’s complex and keeps you in the kitchen for twice, thrice, four times as long…
Lately, I choose #2. Because eggs for dinner is actually sometimes fabulous. Even if that’s choosing scrambled eggs over a fancy caramelized onion omelette.
SIMPLE Yet SO TASTY
All the recipes I created for the Mama Dump are like this. I mean…they’re even RATED from “SUPER Simple”, “Simple Simple” to “Less Simple But Will Make Your Life Easier In The End Simple”. haha.
And here is a recipe I made JUST YESTERDAY.
I made this: Best Smokey Tomato Sauce Ever — because it’s tomato season and what else am I going to do with all those fabulous roma tomatoes. Buy a bushel — and get enough yummy roasted tomato sauce to last you eons. Hooray!!
Then I took a large zucchini (also ridiculously in season and everywhere) and spiralized it. If you don’t know what that means then you’re living in the dark ages. I use this one. But I also love this one. If you don’t own a Spiralizer then you can use a mandolin, slice manually (but then a lot less “simple”), or grate. But the spiralizing takes SECONDS.
Back To School Survival Smokey Tomato Zoodles
- 1 large zucchini, spiralized
- 1 1/2 – 2 cups Best Smokey Pasta Tomato Sauce Ever
- handful spinach, chopped
- leftover happy sausage, chopped up
- a few dollaps of goat or sheep chevre (or Parmesan or both)
- handful fresh basil, chopped
Heat the zoodles (zucchini noodles) up in a pan with a little olive oil and a pinch of salt. After just a couple minutes, add the chopped spinach (optional). Tossed in some leftover sausage (but you could start with this raw, out of the casing, before you even heat the zoodles). Add the sauce to heat up. Throw in some goat cheese and chunky salt. (You could also use parmesan. Or BOTH cheeses.) Top it all off with piles of fresh basil. Sub in pasta if you prefer.
This entire meal took me approximately 6 minutes.
Did you know the average time spent on dinner in North America is 8 minutes? W.T.F.?!?!?!
SO NO EXCUSES. Make this instead. You can also use leftover pasta (or fresh). And the sauce is loaded with whatever veg you darn well please. My LORD is it every tasty.
This meal is also Mama Dump-Friendly — minus the cheese. (We have fun substitutes for that anyway.)
