[Meatless Monday Round-Up] 5 Vegan Dinners Even A Carnivore Can Love

I’m doing a wee round-up today. Because I am constantly inspired by these amazing recipe-developing nutritionists that I feel so lucky to know or know of. All the recipes here would be PERFECT for tonight (Meatless Monday) and would work on the upcoming Spring Dump, if you chose.

Why make Mondays Meatless?

(And it’s not just because I’m obsessed with alliterations — but see you tomorrow for Taco Tuesday. haha)

Well…the world eats a lot of meat. A lot more than it needs to. Especially here in Canada and the States. I’m not interested in starting a debate right here, but reducing the amount of meat you eat each week not only reduces your carbon footprint by an incredible amount… but it also reduces your weekly grocery bill, kind of forces you to eat more vegetables, and makes you think twice about what you’re putting in your mouth.

Personally, in our house, we do a lot of meatless days throughout the week. And when we do eat animal protein, it is thoughtfully chosen and we really understand how indulgent it likely is, and how lucky we are to be able to access the nourishment an animal can provide.

Spring is a great time to eat more veg, and less animal protein. We don’t require the same amount of fat or animal-sourced nutrients to keep us warm and our immune systems on guard.

I mean…WOW. I think what drew me to it especially was the Cilantro Lime Cashew Cream. If you’re doing the Spring Dump and trying this recipe, I’d recommend using the brown rice tortillas because they would work beautifully (if you have any left over after making the Brown Rice Crisps).

A brown rice risotto can take a bit of time to cook, but this one is a bit of a cheat, which is PERFECT. A great way to use leftover brown rice and a super celebration of spring.

If you know me at all you know I secretly dislike most kale dishes. (Sorry.) But…I happen to love a good kale salad. My preference is leaning on Kale Caesar types (like the one on my Spring Dump — you’ll eat it in about 14 seconds, I’m not even kidding). But this one sounds pretty nifty and nice (and simple).
